Pat, don't forget about the crock pot. DH uses that about 1x/wk.

I make tacos or taco salad every so often; "dirty" rice that has lots of cajun-like spice, green and red peppers, shrimp and/or turkey sausage; stir fry with lots of veggies and either chicken, steak, or shrimp; and sometimes I make breakfast for dinner.

I keep pork chops in the freezer and make baked potatoes or boiled red potatoes with frozen veggies and applesauce!

Favorite in the crock pot ... not tonight, we just it last week - I make meatballs and "cook" in the microwave for 5 minutes, cut sweet (or mild) Italian sausage in 1/2 and "cook" it in the micro for 5 minutes. Put them both in the crock pot and dump in 2 jars of sauce - usually Prego, but I use whatever the "shopping guy" buys. Cooking all day makes the sauce SOOOO much yummy!!! and the house smells good too.

Going to DD's today. She always has ham. How about a ham steak sometime in your quick cooking ideas, Pat? Have a Happey Easter, everyone!

Good idea! I've not done a ham steak in a long time.

It's left-overs for the next three nights! LOL! ........we had tacos on Friday night so the leftover taco meat will go into Spanish Rice with a vegetable for tonight. Tomorrow night will be the left-over Tuna Noodle casserole from Saturday night and then Wednesday night will be the left-over Scalloped Potatoes and Ham from Easter Sunday. My husband doesn't mind left-overs, thank goodness! Picked up a couple of nice pork chops at our little grocery store and some fresh asparagus for Thursday night. Friday, I'm hoping for pizza somewhere other than my kitchen. With meals planned, I can just think sewing. :-)

Just finished grilled chicken (in the stove), salad, and oven fries. Yum. I didn't cook.
